Such a crazy weekend, Cookie Pictures

I honestly, can not wait for the holidays to be over :( I didn't get two seconds to sit down the entire weekend and my brain is still going. I woke up 4 times last night from anxiety attacks while I slept. I need to slow down!
I was able to get my niece to see Santa and make a few Christmas crafts on Saturday morning. We took her out to lunch. By the time I got home I needed a nap. I woke up and it was dark outside.
I did some shopping for the cookie party Sunday and Walmart kept one of my bags! The cashier was a sweetheart so it was a total accident, but still. Sunday morning I had to wake up early on my way to my friend's to "claim" my bag. They couldn't find it, so they sent me through the store to gather my things again. Glad I didn't have to re-buy the same items, but there went more time. I spent 5 hours baking and googling over my god son. Got home, went to dinner, did some Christmas shopping, went home watched a movie and passed out.
I'm at 95% of my holiday shopping done. I have about 60% of my desserts cooked for the season. It's safe to say, I am stressed out!!! Work is somehow busier than ever as well. I hope everyone else had a better weekend. Any tips on how to get everything done? Tonight is my niece's Christmas pictures. Another crazy day that won't end until 10pm tonight :( 

Here are the only pictures I took @ the Bake day yesterday. And of course, didn't take a picture of my peppermint bark. I will take one after work today :)

Girlfriends Cookie Exchange

This weekend, all us girlfriends are getting together and baking cookies. Massive amounts of cookies/holiday treats. Since we won't have our monthly girl's night we are having a girl's day to prepare for the holiday season and when we leave, we will be leaving with our assortments of cookies. There are 6 of us, so we will leave with 6 dozen cookies :) And we will have fun baking them together, of course some type of drink will be involved!
Here is my addition to the party.


Peppermint Bark
6 ounces (170 grams) semi sweet chocolate, coarsely chopped
2 teaspoons vegetable oil
6 ounces (170 grams) white chocolate, coarsely chopped
1/3 - 1/2 cup (50 - 80 grams) crushed candy canes

Line the bottom and sides of an 8 inch (20 cm) square baking pan with aluminum foil, smoothing out any wrinkles.
Melt the semi sweet chocolate and 1 teaspoon of vegetable oil in a heatproof bowl placed over a saucepan of simmering water. Immediately pour the melted chocolate into the prepared pan and tilt the pan so the chocolate makes an even layer. Place in the refrigerator for about 30 minutes, or until the chocolate has set.
Then, melt the white chocolate and remaining 1 teaspoon of vegetable oil in a heatproof bowl placed over a saucepan of simmering water. Immediately pour the melted white chocolate over the dark chocolate and tilt the pan so the chocolate is in an even layer. Sprinkle the crushed candy canes evenly over the white chocolate. Place in the refrigerator for about 30 minutes, or until the chocolate has set.
Remove the Peppermint Bark from the pan by lifting the edges of the aluminum foil. Peel back the foil and break the bark into small irregular pieces. Store in an airtight container in the refrigerator for up to two weeks.
Makes about 25 pieces.

Finally feeling better

All it took was a heating pad and mega dose of pain killers :) I don't care if it involved eating frog testicles, if it relieved the pain I would've done it. I'm not sure the temperature of a heating pad or recommended amount of time to apply heat to the stomach area, but I may have fried some of my eggs. Hopefully it was just one or two.
I'm behind on my reading :( and poor Mr. P had to eat frozen perogies for dinner. Over the weekend we celebrated my birthday and I had fun. When I saw the pictures, it looks like I had alot of fun I don't recall....hmmm :) Apparently I was the life of the party. 























Next month, instead of a girl's night, we are having a girl's date and having a cookie baking party :)

Oh, I'm thinking mozzarella sticks and chicken florentine for dinner tonight. I found a show on my netflix called pantry raid and they showed a super easy way to make things straight out of what you have on hand. I'll post the recipes in the next day or so. Something for you to come back for!

- Define sick? Like stay home from work about 4 days out of the year, hospital twice per year. I have a bad immune system and my diabetes gives me health complications.

- Someone else, I would like to help, but I would get bored about halfway through. Welcome to my ADD.
4. If you get 30 minutes to yourself, what do you do?
- Read or catch up on my DVR. Although I'm never alone, the dogs are almost always with me. I don't mind them though.
5. Do you allow people to wear shoes in your house? 
- Yes, but when the floors are redone, we will be a barefoot house :)
