Thrilling Thursday & Easy Chicken Florentine

Well my ultrasound came back fine. They found fluid around my right ovary indicating I had recently ovulated or a cyst had finally burst. I'm thinking the later since I'm on birth control, but with dr. you never know. My aunt also recommended I ask my dr. about endometriosis? WebMD makes me think I'm dying, so I will wait for a professional opinion.
I woke up yesterday with little red spots on my tongue and by lunch my throat was super sore. Mr. P suggested tonsilitis, I called my regular dr. I was able to get in and surprise! I have strep throat. I'm typing this at work....hmmm. I'm a dedicated employee, does it show? (I called and told my boss, he told me to come in) Thanks guys.
I did manage to make dinner last night and it turned out great. It was easy and perfect for me since I wasn't ready for too involved of a recipe. I found this show Pantry Raid on netflix and his recipes seem super simple. It was on the style network for one season in 2007 and then was canceled. The Take Home Chef with Curtis Stone was better, but this other show was for the "normal" cook. No weird ingredients and most everything is on hand. Anways, here's the recipe:

4 chicken breasts
1 cup flour
4 tablespoons spinach dip
1 cup parmesan cheese
1/2 cup oil
1 teaspoon butter
Salt

Pound chicken into thin pieces and season with salt. Lightly dredge each breast in flour. Add oil to preheated oven-safe skillet large enough for all four chicken breasts. When the oil is hot, add the chicken breasts and cook until golden brown on one side. Flip chicken breasts and carefully spoon spinach dip on top of each piece. Sprinkle cheese on top of the spinach dip, add butter to the pan, and bake at 375 degrees for 10 minutes.

I served with steamed mixed veggies and mozzarella sticks. There's a recipe for mozzarella sticks that he makes from string cheese. When I try those I will post the recipe :)

So busy, how do you do it? Splinter DVD

 I have so much to do and not enough time in a day. I'd do it all today, but most of everything I have to do involves food, so it would go bad. I am horrible at time management :/ Since 3rd grade, my teachers have told my parents how smart I am, but I wait until the last second to get things done. For school it doesn't bother me, I work well under pressure, but everything else gives me a heart attack! 
I have cupcakes to bake (brownies too!) and a 3 tiered cake to transform, shopping to do, cleaning, decorating oh and don't forget working :( I considered taking the rest of the week off but I really like getting a paycheck.

I also have a dr. appt today. I feel like a lab rat, constantly being poked and prodded and it's at my lovely girly doctor so I will be propped up on a table, legs spread. Ahhh, the joy of being a woman!
Last night we watched Splinter, it was a total miss, but after 45 minutes of watching it, we decided to just finish it.
I give it 2 out of 5 stars. It wasn't great, it wasn't even good, but once we started it we managed to finish it. That usually doesn't happen. It's a decent Halloween movie, but I wouldn't recommend it to anyone. There was a line in the movie that I have to share though. The girl's bf is cutting off the infected guy's arm and she says "It's ok, we are just cutting off your arm." So that was the tone for most of the movie, LOL. They kept doing things that you know are stupid, but you know someone is gonna make it somehow. It was pretty gross, so skip it if you have a weak stomach.

I WISH....

work would slow down :( I've been so swamped lately I barely have time to eat. Seriously, I had a snack size bag of cheetos and a yogurt so far today and it's almost 2:30! My mom had me do her a favor at lunch, so it was pretty much skipped, but still. It's not the norm for me to have to rush through everything. 

I was able to see my niece last night and she was so cute. She's 3, adorable and says the cutest things. She got to meet Mercedes last night and when we were driving to my mom's she told us how Mercedes was going to need a nap because she "looked" tired. How does a puppy look tired? Riley also wanted to know where the baby (puppy)'s pacifier was? She's a baby and needs her paci auntie! LOL, so cute. I love that little girl so much.
I'm feeling completely drained. My SIL that I went shopping with on Saturday found out she has pneumonia, which I probably got. I've been feeling blah since Saturday :( I think I'm going to get out my new sweats and curl up on the couch tonight and maybe read more of my book. BTW, reading commencement, I love it! I went to the dr and got my second opinion. Her suggestion was birth control to help stop cysts from forming and stopping my ovulation. I'm undecided how I feel. Mr. P and I talked about engagement last night. We aren't engaged, but eventually. Probably wouldn't be a bad idea to start it now. I just hate taking more pills than I need to and my other dr. never saw it as a problem. Guess we will see. That's all for now.

Manic Monday

I'm beyond swamped and have lil time to update everyone on my weekend :( I was excited too cuz I sorta went on a shopping spree at the outlet malls and wanted to show off my new finds. Well I did manage to find some boots and will look them up and post hopefully tomorrow.
I have a dr. appt scheduled for 3pm today, they just called and asked what the earliest I can get there is because a patient went into labor. Ok, well that's fine and dandy, but not my problem (no offense preggo chicks) but I made the appt. fair and square I should get to keep it. There are other doctors that can help her, my dr. can't deliver every baby right? I know, I'm being selfish. I'm leaving work at 1pm to get there by 2 (it's not a whole hour, but I haven't been there yet) so time for traffic and getting lost. Compromise right? I will try to put up another post soon about the weekend :)
