It's Snowing!!! Patty Melt (Food Network)

I love the snow at this time of year, it's still so white and pure. Also, I live in MI and this sort of snow doesn't impair our driving, well for most of us at least. I've been so busy lately and having a hard time keeping up. I celebrated my 24th birthday! I spent the day Christmas shopping and bought my girls matching wristlets that are so cute. I bought one in each color :)
They are on sale this week and uber cute :) I had found some on QVC, but they were sold out. I also bought a wallet from my honey and some slippers for his dad.
Mr. P took me out to dinner @ Red Lobster where they sang and embarassed me and then had no diabetic-friendly dessert :( Same thing @ Chili's last night. The food at both places was good and stopped me from cooking. I do have a recipe to share today :)
Last night we got our new bed! Ugh, it was like heaven. It's a king and plush. Giant and huge, who cares if it takes up 3/4 of the bedroom, it's totally worth it! 
What's for dinner? My secret to share is I subscribe to multiple (as in like 5) cooking emails.They send me menu ideas and I usually pick one or two to try during the week and the rest are meals I regularly rotate. Tonight we are having Patty Melts! Here's the base recipe (if I don't have something or don't like something, I improvise!)

Patty Melts

Ingredients

  • 2 tablespoons butter, softened
  • 4 slices rye bread
  • Salt and freshly ground pepper, to taste
  • 1 1/2 pound fresh ground round (divided and shaped into 2 oval burgers)
  • 1 tablespoon olive oil
  • 1 small red onion, peeled and sliced into rings
  • 2 to 3 slices Swiss cheese

Directions

Melt butter over flat top griddle or large cast-iron skillet and toast rye bread slices. Season and grill burgers on flat top. Cook to medium-rare. Put olive oil on griddle and grill onions until caramelized. Melt cheese slices over each burger. Assemble patty melt by placing cheeseburgers over one slice each rye toast, top with caramelized onions and remaining slices of rye toast.
